Fig ficotto or fig balsamic is a product of the Basilicata region in southern Italy, produced by the terra vecchia farm in policoro. ficotto is made from red figs of the pisticci variety and is obtained by slow cooking at a temperature of 65 degrees, using only the juice of the fig and water, with no added sugar. it has a syrupy flavour, is amber-coloured and has a honey-like consistency, and can be used to accompany certain savoury dishes or for desserts.
