Originally from China, Yuzu is now found throughout Japan. The peel of this small citrus fruit is dried and ground very finely. It is combined with soya sauce to make ponzu, a flavourful accompaniment to a wide range of dishes, from fondue (nabe-mono) to sashimi and miso soup, and can be used in both sweet and savoury dishes.
