This oil has a very pronounced flavour, is long on the palate and has lingering aromas. It does not stand up to all vinegars (we recommend balsamic or honey vinegar). This oil is ideal for a thinly sliced endive with a few shavings of trout or smoked salmon on top, drizzled with a vinaigrette (pistachio oil, balsamic vinegar, salt, pepper and chives). Green bean salad with the same dressing. Warm lobster rolls sautéed in butter can be served with the green bean salad.
